Wild for Wild Rice!

Did you know Minnesota lakes and rivers produce most of the wild rice you find at your local grocery store?

Wild rice is Minnesota’s state grain.  For centuries, the Ojibwe have been harvesting wild rice in local waterways. With such a rich history behind this earthy grain, many Duluth restaurants have perfected various wild rice recipes.

You'll find a wide variety of wild rice cuisine at many Duluth restaurants. Grandma’s Saloon and Grill features a signature wild rice soup. At Duluth’s original brewpub, Fitger’s Brewhouse, you can enjoy several variations of wild rice burgers. The Duluth Grill offers a marvelous wild rice melt, and, for something a little lighter, try the Boat Club Restaurant’s Chicken Cranberry Wild Rice Salad.

Similar to the salmon patties my mom cooked on Fridays when I was growing up, this recipe calls for crushed saltine crackers and whisked eggs as a binder. The shredded cheddar cheese helps, too. For best results, cook your wild rice the day before. We think these would be fantastic on the grill — if yours has a cast-iron griddle — and perfect for serving at your Independence Day cook-out.

Chicken Wild Rice Soup

Inspired by Grandma’s Saloon and Grill's Famous Chicken Wild Rice Soup
I'm originally from Minnesota, where wild rice grows in abundance and is very popular in recipes. This chicken and wild rice soup has been part of our Christmas Eve menu for years. To save time, I cook the chicken and wild rice and cut up the vegetables the day before.
